The flavor of the classes, at the end of the day, is incredibly similar; a brilliant mind with deep, specialized knowledge. The distinguishing traits between one character of this combination and another are going to lie in the specific knowledge they have chosen to pursue.
On balance, the savant is a little more oriented around combat than the scholar, but the specifics of a given build are likely to come down to which class features the player finds most compelling. More levels of savant will result in a character with more savant tricks to choose between, which may be appealing if more options are desired and a stronger focus on scholar levels will grant some more diverse options for determining the type of studies the character has pursued.
